Like your registry editor, Eraser2K is a tool you'll use at your own risk. It kept finding files and converting them, but it never loaded windows. Any other suggestions?
There is a program called RegScanner that may help, you can search for something like "Office" and see what it finds. Delete the "C:\Program Files\Office" directory - or alternate location if a custom install was done. Perhaps there is a MS Office 2000 file in the Registry Editor that contains the customized settings and restores them even after a complete uninstall - reinstall process. There is an eraser for Disc 1 and Disc 2 so grab them both if you have installed content from Disc 2. Cannot install, repair or uninstall.
